Update nixos 25.05

Description of changes

We are finally upgrading to 25.05. I think everything is ready, but please double check the breaking changes (https://nixos.org/manual/nixos/stable/release-notes#sec-release-25.05) to make sure it's all fine. We need to have this ready for tomorrow, because public tests start Thursday.
